A contemporary Basque bistro with pork at the heart of its cooking.
Odoloste is a wood-lined bistro near the Guggenheim whose contemporary Basque cooking centres on pork. Chef Igor Aguirre’s menu uses that ingredient as a thread through the restaurant’s approach to local produce.
Reserve ahead if you want the private Txokito, which seats up to eight people. That space requires the whole table to choose one of the tasting menus; check the current menu before booking if anyone in your group avoids pork.
